Variety Overview

There are a couple of commonly available varieties of purple sweet potatoes. The Stokes Purple variety is irregularly shaped with thin dusty brown skin through which its vibrant red-purple flesh is visible. Okinawan sweet potatoes are less elongated in shape than typical sweet potatoes and have light tan skin with purple flesh.

  • Stokes Purple sweet potatoes are irregularly shaped, similar to a typical sweet potato, with dusty brown skins and vibrant red-purple flesh. Okinawan sweet potatoes are also irregularly shaped but less elongated than normal sweet potatoes, with light tan skins and purple flesh.

  • Stokes Purple has dry, dense, red purple flesh. Okinawan sweet potatoes have dense flesh with a more creamy texture.
