There are a couple of commonly available varieties of purple sweet potatoes. The Stokes Purple variety is irregularly shaped with thin dusty brown skin through which its vibrant red-purple flesh is visible. Okinawan sweet potatoes are less elongated in shape than typical sweet potatoes and have light tan skin with purple flesh.
