Shaped like a sweet potato, the name has dark brown or tan skin, with a creamy or yellow flesh that has a nutty flavor. It is also known as a yam. Use the vegetable as you would a potato -- it can be boiled, steamed, mashed or fried. Name is available year-round from the U.S. as well as from areas in the Pacific Rim.
