Commodity Overview

Cassava has pink to brown rough skin with dense, softly fibrous white flesh. It is also known as yucca and is shaped like an elongated sweet potato. It cannot be eaten raw. Careful preparation is necessary because improperly prepared cassava can release cyanide. The vegetable can be used similarly to potatoes -- fry, boil, mash or steam. It is available year-round.
