Variety Overview

Immature Cubanelle peppers are yellow-green and look like an elongated bell pepper or a banana wax pepper. They have thin skins but thick walls and a somewhat mild, sweet taste with a bit of heat. Mature Cubanelles are vibrant orange-red and hotter, though still sweet. Cubanelle peppers range from 0-1,000 Scoville units depending on their maturity, and are most often consumed during the milder immature stage.
