Similar in size, color and flavor to green cabbage, savoy has a milder flavor. It is recognized by its crinkled outer leaves and lighter to white inner leaves. The vegetable can be eaten raw in salads or cooked and added to soups and stews. It goes well with a variety of herbs as well as garlic and shallots or onions. It is available year-round.
