Baby lettuce categorizes a wide range of varieties, including baby romaine, baby head lettuces, baby leaf lettuces and more. Basically these are immature versions of the traditional lettuce varieties picked at an earlier stage to be more tender and delicate. They can be lighter in color than traditional lettuces because they're at an earlier stage of development when harvested. Baby lettuce is available year-round.
