Baby leeks don't have bulbs like a traditional onion, but they do impart that pungent flavor, although a bit milder. They actually resemble scallions. The thin stalks are edible, from root to tip, and can be easily sliced into cooked dishes or added raw as a garnish. They are available year-round.
