Baby bok choy is the younger, more tender version of the traditional variety. They can range from 3-5 inches long with a more mild flavor than the regular type. Baby bok choy can be cooked whole and is often used in Asian cooking like stir fry or soups. It is sometimes called white cabbage or bak choi.
