Having the appearance and flavor of spinach, ong choy may have pale green triangular leaves and thick, hollow stems or deeper green leaves with thin, hollow stems. Leaves can be as small as 1 inch or as long as 6 inches. Ong Choy tastes like traditional spinach when cooked, and its leaves can be used similarly -- added to stir fry or eaten raw. The stems can also be cooked to add a crunch to dishes. It is also called water spinach
