Gai choy is a variety of Chinese mustard. It is a lime green, large, twisted green, and it has a napa-like bitter taste. Young gai choy is often used in salads because of its tenderness, as it matures it's better cooked in stews or soups. It can be eaten raw, cooked or dried.
