Amaranth is a leafy green vegetable that has dark green leaves and a tender texture. The leaves taste like spinach, and it is most often cooked and used in soups or sauteed as part of a stir fry. Smaller more tender stalks may also be eaten raw. The seeds of amaranth are a grain that is often used as a replacement for wheat in gluten-free dishes. Available year-round.
