Xica’s Fresh Summit recap
Fresh-cut jicama company Xica Brands is introducing a new product, jicama noodles.
Xica (she-ka) promotes the “noodles” as gluten-free and ideal for stir-fries and noodle salads, and promoted them at the Produce Marketing Association’s Fresh Summit expo on Oct. 18-19 in Anaheim, Calif. The noodles join Xica’s other jicama cuts: spears, tortillas, tortilla chips and ready-to-eat tacos.
Xica touts the root vegetable as low in sugar, grain-free and “carb rich,” according to a news release. Jicama was named this year’s “it superfood” by EatCleaner.com.
Jicama has a potato-like texture and can be eaten raw or cooked as a side dish or main entrée, according to the release.
At its booth, Xica showcased a variety of tacos, pre-cut jicama spears and noodles, according to the release.
On Oct. 18, Chef Mareya Ibrahim aka the “Fit Foodie,” prepared a Xica noodle dish to share with Fresh Summit attendees.
