There’s nothing like mushrooms for the holidays, Monterey says
Watsonville, Calif.-based Monterey Mushrooms has a new e-cookbook designed to help home cooks freshen up their holiday menus with plant-based recipes for appetizers, sides and beverages.
“Whether they’re the star of the dish or used as an ingredient, fresh mushrooms will liven up your menu with a healthy punch of flavor,” Lindsey Occhipinti, marketing manager, said in a news release.
The cookbook, which can be downloaded here, includes recipes for:
- Baby Bellas, Figs, Honey and Brie;
- Mushroom stuffing;
- Gluten Free Mushroom Herb Gravy; and
- Mushroom, Apple and Walnut Stuffed Acorn Squash,
among others, according to the release. All of the recipes in the book incorporate mushrooms in some way.
“People shop for and cook with mushrooms during the holidays more than any other time of year,” Occhipinti said in the release.
“We have a full line to choose from — starting with the traditional whites all the way to portabellas and exotic mushrooms like shiitakes. Home cooks have this wonderful ingredient at their fingertips and we wanted to provide some flavor-forward recipes to try this fall.”
